Baked Beans

Ingredients:

1 tbsp balsamic vinegar

2 garlic cloves

240g mixed beans (drained) - I normally use butter beans and cannellini beans

1 red onion

2 tbsp smoked paprika

1 beef stock cube

2 tbsp tomato paste

Method:

  1. Finely dice or crush the garlic. Halve the onion - thinly slice one half and finely dice the other. Drain and rinse the beans. Dissolve the stock cube in 100ml boiling water.

  2. Heat 1 tbsp oil in a medium pan over a medium-high heat. Add the onions and garlic, cook for 5 mins, then add the paprika. Cool for a further 2 mins then add the stock, beans, balsamic vinegar and tomato paste. Simmer for 10 mins. When done, season with sea salt and black pepper.
