Chocolate Mousse

Ingredients:

100g dark chocolate, cut into small pieces

50g unsalted butter

3 tbsp caster sugar

10 cl soy cream / double cream

6 eggs

Method:

  1. Melt the butter in a small pan. Add the chocolate, mixing constantly until you get a smooth mixture. Leave this mixture to cool down.

  2. Separate the egg yolks from the egg whites. Mix the yolks with the sugar, and add to the chocolate mixture. Add the cream.

  3. Beat the egg whites until you have peaks. Incorporate into the chocolate mix, folding carefully.

  4. Put the mixture into small individual pots. Put into the fridge for at least a couple of hours.
