Twice Baked Potatoes
Ingredients:
Baked potato
2 tsp butter
1 tbsp milk
One spring onion sliced
peas/sweetcorn (small handful)
Grated cheese
Ham, cubed
Method:
Preheat the oven to 180C.
Place a large baking potato, sprayed with oil, on a baking sheet. Cook for an hour until cooked.
Allow to cool a bit. Cut off a circle at the top, and empty out the flesh (you want just enough to ensure that the potato skin holds its shape).
Put the flesh in a pan. Mash and then add butter, some milk/cream, sliced spring onions, peas, sweetcorn, grated cheese and diced ham. When well mixed, fill the potato skin and cover with the circle of potato you cut off.
Bake for 20 minutes in the pre-heated oven. Eat hot.
